Looking for an easy chicken recipe? Chicken Piccata sounds fancy, but takes only about an hour to make and tastes restaurant worthy! RC found this recipe online and we make it often! I'm the roasted potato queen :)
Chicken Piccata

What you'll need:
2 skinless and boneless chicken breasts, butterflied and then cut in half
Salt and pepper
Flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock (we often use white wine instead of chicken stock)
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped
1 lemon for garnish
What you'll do:
Season chicken with salt and pepper. Dredge chicken in flour and shake off excess. In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate. Add the lemon juice, stock and capers to the pan. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.
This will make 4 servings.
Roasted potatoes
What you'll need:
10 small red potatoes
1/2 cup flavored olive oil (we always use Stonehouse from the Ferry Building on the Embarcadero, but you can order it here)
2 tablespoons of cajun spice (optional- for a spicy kick)
What you'll do:
Heat oven to 400 degrees. Dice potatoes into quarters. Coat diced potatoes in flavored olive oil and spices (save any extra for a final sprinkling). Place diced potatoes on baking sheet; it's ok if the potatoes touch. Bake for 45 minutes, turning the pan halfway through.

Kitty, please?
I want a pet. Our cozy city spot doesn't allow for any pets... but I still want a kitten. Really badly. I ask RC almost everyday if we can get a cat. He tells me everyday that as soon as we move to place that allows pets, I can have a kitty. He even wrote me this sweet note.
And a couple months of ago, I came home to a sweet package from theittybittykittycommittee. Ryan purchased a set of their postcards for me (and they have magnets coming soon)! One day, when I become a crazy cat lady; I don't think I'll even mind... I'll just keep lovin' my adorable kittys.

Favorite part of the last two photos- the gorgeous Golden Gate in the background. What a great city! Tried some great wine at the event and enjoyed fabulous company with the girls. Some new wine varietal highlights: Montepulciano, Barolo, Fresia. It's true- there is more to wine than just Chards and Pinots!

A must try snack
Sunday was such a lazy day- which was fine with me! RC and I fixed waffles. I devoured a delish chocolate chip banana waffle and RC fixed a syrup laden banana waffle- his had a happy banana slice face. I was too hungry to make any thoughtful designs on my waffle.
Later (after waffles) we fixed a delicious Superbowl snack! Spicy buffalo chicken cheesy ranch dip- ok I'm not sure of the real title, but it really is so good! Try it at your next get together; guaranteed to be a hit!

Spicy buffalo chicken cheesy ranch dip
What you'll need:
3 chicken breasts
3/4 cup of Frank's Red Hot Sauce (Buffalo)
1 cup Ranch dressing
16 ounces of cream cheese
1 cup shredded cheddar cheese
What you'll do:
Boil and shred chicken. Combine Frank's Red Hot with chicken and heat for 5 minutes or until hot. Add ranch and cream cheese. Cook on medium heat until cream cheese is fully melted. I tasted mine after this step and determined that it needed a little more kick, so I added some more Frank's. Add 1/2 cup of shredded cheese. Transfer to a mini crockpot cooker on low. Right before serving, add the remaining 1/2 cup of shredded cheese on top. Serve with celery sticks, crackers, apples- heck just put out spoons- everyone will love it!
Makes enough for 5 people to share. Youmay probably need to double triple this recipe for larger groups. YUM!

Weekend Plans
This weekend I'm attending The Golden Glass event at Fort Mason. It's predicted to be a sunny Saturday (rare for January in the city!), so my girlfriends and I are prepared to enjoy every single bit of the day!

The event is tomorrow, Saturday, January 4th, from 1pm-5pm at Herbst Pavilion, For Mason Center, San Francisco, CA, 94123 (at Marina Blvd & Laguna St). Fort Mason is a part of the National Park service and is always hosting events. To find out the next event, check it out here.
On Sunday, RC and I plan to spend the day watching the Superbowl and eating some snack recipes I've been wanting to try. I'm rooting for whatever team Tom Brady is on- he is so dreamy. Also, we're watching The Puppy Bowl on Animal Planet- don't miss it!
